In 2022, the historic “Ancient Cave” was transformed into a finishing cave for experimental bourbon barrels. The bourbon in these barrels was aged for at least six years in one of the rickhouses before being dumped and transitioned into these new variety of barrels. There is not a specific timeline for the bottling of these products as we are aging to taste. After several months of aging, we are excited to share that the very first release from the Holladay Cave Collection will be available for tasting at the distillery for the very first time on National Bourbon Day.
